Rrraw is a Chocolate manufacturing workshop in the historic Paris's Sentier district and we allowed many chocolate lovers to discover a rarely manufacturing process: The Bean-To-Bar.
To produce a standard chocolate, cocoa beans are roasted then hot-ground over several days. For our raw chocolate, the cocoa beans are first delicately fermented, washed and sun dried before being sent to the factory. This is an organic quality plant ingredients, without the addition of lecithin, palm oil or additives. The "raw" manufacturing process also preserves most of the nutrients, which are partially destroyed by heat during roasting and cooking. We are very attached to a vision of more natural and respectful artisanal preparation of the raw material.
